Pineapple, Ginger and Chicken Rice. This is a long video guys. It took me a week to try to edit it with iMovie messing up. Hopefully you get the gist of what I was doing.
This Ginger Pineapple Fried Rice is a great rice side dish for shrimp, pork, or chicken that calls for starting with chilled, cooked rice. I grilled some shrimp with some fresh pineapple the other day and served it with this ginger pineapple fried rice. This fried rice recipe with pineapple, chicken, and prawns is inspired by Thai street food and is a quick lunch or dinner. Ingredients of Pineapple, Ginger and Chicken Rice
- Prepare 1 of large chicken breast.
- Prepare 2 tbsp of soy sauce.
- You need 2 tbsp of oil.
- Prepare 1 clove of garlic, finely chopped.
- You need 1 tbsp of fresh ginger, finely chopped.
- Prepare 1 of carrot, small diced.
- Prepare Handful of green beans.
- Prepare Half of red pepper.
- You need 2 of rings of pineapple, small diced.
- You need Handful of mangetout.
- Prepare 50 g of sweetcorn.
- Prepare 65 g of brown rice.
Tips: Use day old COLD rice and break it up with your hands before adding. Use light soy instead of regualr soy as per my oriinal recipe. Drain juice from pineapple into glass measuring cup. Meanwhile, to make the pineapple chicken, put the chicken in a bowl and season with salt and black pepper.
Pineapple, Ginger and Chicken Rice step by step
- Toss the chicken in some salt and pepper to season then let marinade in the soy sauce and set aside..
- Heat 1 tbsp of the oil in a frying pan over a medium heat.
- Add in the garlic and ginger, cooking for 1 minute until softened.
- Add the rest of the oil to the pan with the chicken pieces and cook until sealed on all sides.
- Add the carrot, pepper and green beans and cook a further 2 minutes until the chicken is browning before adding mangetout, sweetcorn, pineapple and cooked rice.
- Drizzle fresh soy sauce over, stir through then serve.
Add the cornflour, mix well to coat and set aside. This Pineapple Ginger Chicken is tangy and sweet. Three of my faves that's why I know I will love it! I served it with cauliflower rice and it was delicious. Can't wait to finish the leftovers for lunch.
